Chef Jib presents Spirit of Thai, a tasting menu inspired by regional flavours and the comforting traditions of home-style cooking. Each dish brings together classic recipes, thoughtful preparation and beautiful presentation, offering a journey where culinary heritage meets Chef Jib’s creative expression. Warm, attentive service from the Celadon team, a peaceful lotus pond setting and traditional entertainment complete the experience.
The journey begins with four bites inspired by the country’s four regions, followed by deep-fried beef cheek and scallop, southern-style chicken with aromatic rice salad, and red grouper in a spicy herbal broth.
Northern flavours unfold through grilled river prawns, tenderloin, herb sausage and green chilli dip, accompanied by steamed vegetables, sour vegetable soup and sticky rice. Traditional sweets and pickled star gooseberry ice cream offer a refreshing contrast before coconut candy and The Sukhothai Tea bring the meal to a gentle close. Optional wine pairings are selected to complement the flavours throughout the journey.
