Experience Chef Jib’s tasting menu, an elevated interpretation of Thai street food and home cooking, served as a refined six-dish tasting experience, complete with petit fours.

Chef Jib presents a new tasting menu, Spirit of Thai, inspired by Thai street food and home-style cooking. Each dish is carefully prepared using classic flavours and presented beautifully, creating a dining journey where Thai tradition meets creative cooking in every bite. With warm, attentive service from the Celadon team, the experience is further enhanced by a peaceful lotus pond setting and traditional entertainment, perfectly suited for an unforgettable dining experience.

The new tasting menu begins with RICE COCONUT CAKE & SQUID — A refined interpretation of a familiar snack, pairing grilled Andaman squid with tender rice-coconut cake, brightened by shallot, lemongrass, lime, and coriander oil.

The culinary journey then advances to CHICKEN RICE — Southern-style brined chicken thighs enriched with spicy ginger sauce, smoked chestnut purée, chicken broth jelly, and ink squid—an elevated nod to the beloved comfort dish found on countless Thai street corners.

The procession continues with MOO PING — A re-imagined classic of grilled Pathum Thani pork neck served with sticky rice and a spicy Isan mulberry dip, capturing the spirit of late-night grill stalls.

As the experience unfolds, SCALLOP IN COCONUT MILK — Rolled scallop wrapped in kataifi, complemented by Baan Peaw sour coconut milk, shimeji mushroom, chili, and coconut foam—melding tradition with refined technique.

Thereafter, the menu progresses to BEEF CHEEK NOODLE SOUP — A tribute to Khon Kaen’s iconic noodle culture, featuring slow-braised beef cheek served in a deeply aromatic broth.

The journey transitions into dessert with, THAI CORN SALAD — A refreshing and playful course highlighting grilled Royal Farm sweet corn caramel, ground peanut, papaya sauce sorbet, and Chiang Mai pea.

The experience concludes with PETIT FOUR — Sweet coconut dumpling and Thai tea white chocolate ball, served with The Sukhothai Tea, providing a gentle, traditional finish.
