The journey begins with a smooth cocoa bean mousse, crafted from 70% dark chocolate infused with locally sourced coffee—bold yet balanced, with a gentle bitterness that lingers elegantly on the palate.

Layers of Noir Orange chocolate introduce a subtle citrus brightness, lifting the richness and adding refined complexity. At its core lies a hidden indulgence: a delicate chocolate filled with Grand Marnier and Kahlúa crème, revealing warm notes of orange liqueur and roasted coffee.

Finished with cocoa crumble and a touch of fresh citrus, this dessert is a harmonious composition of flavour and texture—both comforting and sophisticated.

Encased within a delicate white chocolate shell is a light Thai coconut and vanilla mousse-smooth, fragrant, and reminiscent of traditional sweetspaired with a bright mayongchid chutney at its core, adding a refreshing contrast.

Layers of texture unfold with Thai fruit cake, crisp fruit chips, and mayongchid sorbet alongside lightly grilled fruit. A dusting of white chocolate “snow” infused with prik glur introduces a subtle savoury note.

Finished with an edible cinnamon stick, this creation is both nostalgic and inventive, celebrating Thai ingredients and the spirit of Easter.
